Lebneh (is yogurt which has been strained in a cloth or paper bag or filter, traditionally made of muslin, to remove the whey, giving a consistency between that of yogurt and cheese, while preserving yogurt's distinctive sour taste.), Green salad, Lebanese Pickles and Olives, Tabbouleh (is a Levantine Arab salad dish, often used as part of a mezze. Its primary ingredients are finely chopped parsley, bulgur, mint, tomato, scallion (spring onion), and other herbs with lemon juice, olive oil and various seasonings, generally including black pepper and sometimes cinnamon and allspice.)
Khubz ( refers to a large flat bread baked in a special oven often called a "tannuur". The dough is rolled out like a pizza dough then it is positioned on a round board and slapped on to the inside wall of the large round stone oven. The impact of the slapping action causes the dough to stick to the wall of the traditional oven, where it remains until it is bubbling and brown and cooked through, then a long wire hook is used to remove the finished Khubz and throw it over to a tile counter where it is ready to be sold.), Baba Ganuj (is an Arabic dish of eggplant (aubergine) mashed and mixed with various seasonings. Frequently the eggplant is baked or broiled over an open flame before peeling, so that the pulp is soft and has a smoky taste.[2] It is frequently eaten as a dip with khubz or pita bread, and is sometimes added to other dishes. It is usually of an earthy light brown color.)
Hummus (is a Levantine Arab dip or spread made from cooked, mashed chickpeas, blended with tahini, olive oil, lemon juice, salt and garlic. It is a popular food throughout the Middle East.) Falafel (is a fried ball or patty made from spiced chickpeas and fava beans.
Kofta (It starts with fatty pieces of lamb shoulder, which I finely ground, combined with parsley, onion, cinnamon, cloves, nutmeg, salt and pepper. The lamb mixture was then formed around skewers and grilled.)
